I am not normally a cold soup
lover. However, I do make an exception in this instance. Since I
fancy tomatoes, this soup is definitely to my liking. If you like tomatoes
then you will also like it.
¼ cup olive oil
2 tablespoons lemon juice
3 cups tomato juice
1 cup beef broth
¼ cup onion, minced
1 tomato, cubed
1 cup celery, minced
¼ teaspoon Tabasco pepper sauce
1 teaspoon salt
⅛ teaspoon pepper, freshly ground
1 bell pepper, minced
1 cucumber, diced
Beat together the oil and lemon juice.
Stir in the tomato juice, broth, onion, tomato, celery, Tabasco, salt,
Chill 3 hours.
Serve bell peppers, and cucumbers
Keeps several weeks in refrigerator.
